RuRu’s Lemon Bars

Nothing says Summer like sweet and tart Lemon Bars. 🍋 And even though the kids are going back to school, it still feels like Summer in Alabama!! 🥵

This recipe is from my sweet friend Chereé’s mom, Ruth Anne. She was lovingly called RuRu by her grandchildren – and some of us too! 😊

It’s an easy to make recipe with just 7 ingredients that you may have in your kitchen right now. You can have fresh lemon bars in less than an hour. 😋

RuRu’s Lemon Bars

Preheat oven to 350 degrees

Crust:

  • 1 and 1/2 cups flour
  • 3/4 butter, softened
  • 1/2 powdered sugar

Mix together and pat into a 9×13 pan. Bake for 15 minutes.

Filling:

  • 4 eggs, beaten
  • 1 and 1/2 cups granulated sugar
  • 4 tablespoons flour
  • 3/4 teaspoon baking powder
  • 1/2 cup lemon juice

Mix well and pour over baked crust. Bake for an additional 25-30 minutes until lightly browned around the edges and set in the middle

Cool for 5-8 minutes and sprinkle with powdered sugar. Cool completely before cutting into bars.

The recipe fills a 9×13 pan so there are plenty of Lemon Bars to share…or not! 😉
