Pumpkin Pie Overnight Granola

Nothing says Fall like all things pumpkin! I found this recipe for Pumpkin Pie Overnight Granola at $5 Dinners and knew I had to try it!

Here it is ready to go in the oven. It already smells so good! 😋

I actually made my granola in the morning and left it in the oven several hours instead of overnight. It just worked better for my schedule.

Here’s the granola after baking it and letting it sit in my oven, after turning it off, for about 6 hours. It will make your kitchen smell like Fall! 🍁🍂🍁

You can sprinkle Pumpkin Pie Overnight Granola on yogurt, fruit, or even vanilla ice cream. Or grab a handful for a quick snack. 😋

Store your granola in an airtight container for 4-5 days. If you still have some left, pop it in the freezer and take out a scoop when you want some. It will thaw quickly.

One thing I noticed when I made this is that it wasn’t quite as crunchy as I thought it would be – but it still tastes wonderful! 😋 The recipe says to bake it at 325 degrees and the video says you can also bake it at 400 degrees. I baked it at 350 – next time I’ll try 400. It may just be the difference in my oven.

To make this batch a bit crisper, I spread it out again on my baking sheet and baked it at 400 degrees for 10 minutes. It made the granola crunchy and perfect! 😋

I used canned pumpkin purée to make my granola, but I think it would be so good with fresh pumpkin purée (sadly I didn’t have any fresh left in my freezer). It’s easier to make than you think! Click over to this post to see how I make fresh pumpkin purée.
