I was looking for something I could make ahead for breakfast that would be a good source of protein.Being able to freeze in individual servings would also be a plus!
I found this recipe Keto Breakfast Sausage Muffins on Pinterest and thought I’d give them a try. They are super easy to make and the recipe makes 12 muffins.

I added the sausage to the bottom of my muffin tin and then poured in the egg mixture. I only added 1/4 of a slice of cheese to each cup – next time I think I’ll add 1/2 slice like the recipe calls for to add more cheesy flavor. 🙂

Here they are fresh from the oven. Let them cool a little and they will slide right out of the muffin cups.

I didn’t take a picture, but we added a dollop of sour cream to the top of the muffins when serving.

You can store these muffins covered in the fridge for 3-4 days or put them in a freezer bag for an easy breakfast later. When you’re ready to eat them, just microwave them until heated through.
They also make a great light lunch or dinner – just add a side salad or some roasted veggies!
