Kauai, Hawai’i

Dreaming of warmer and more relaxing days during this busy Christmas season… 🙂

I shared the highlights of our amazing visit to The Big Island of Hawai’i in this post. And as wonderful as that was, it was only the beginning of our adventures. After 3 days there, we flew over to Kauai – The Garden Island.

We weren’t able to check into our hotel for several hours so we took a drive to do some sightseeing. Our first stop was overlooking the Wailua River…such beauty! 

Next we stopped to see Opaekaa Falls

And there are wild chickens and roosters everywhere!!! Maybe this is why…

So what does Kauai have so many wild chickens?  Most people suggest that the feral chicken population can be traced back to when Hurricane Iniki hit Kauai in 1992. It’s been reported that the devastating hurricane destroyed a number of chicken farms.  Wikipedia also suggests another possible theory: “Others say that sugarcane plantation laborers in the late 1800s and early 1900s brought and raised chickens (for eating and cockfighting) and many got loose over the years and multiplied.”

Does this waterfall look familiar? I’m probably dating myself, but this is Wailua Falls which was seen in the opening credits of the TV show Fantasy Island.

The next day we drove up to Waimea Canyon. I can’t even begin to tell you how absolutely gorgeous this is!! The layers of color, the mountains, the valleys, the clouds, the fog between the mountains…truly breathtaking!!!

And I can’t forget about The Fresh Shave … the most amazing shave ice I’ve ever had! Definitely worth searching out this little food truck. Made with fresh, homemade syrups and fresh fruit. So yummy and so friendly! If you find yourself on Kauai you have to go there!!

Our last evening on Kauai we took a Napali Sunset Tour with Holo Holo Boat ToursThank you to my friend Chereé for recommending this great tour company. Our captain and crew were amazing! This was a last minute adventure for us – but if you go to Kauai you HAVE to make this a priority! The Napali Coast is something you will not want to miss! The views are absolutely magnificent – I promise you will not be disappointed! The pictures do not even begin to do justice to this amazing coast…

This is about half way through the cruise, we were windblown and covered with salt from the sea spray, but having the most amazing time!! 🙂

And of course there would be a beautiful sunset on the sunset cruise!
