Roasted Sweet Potatoes with Brussels Sprouts

Hi friends,

I’ve shared some quick recipes for roasting vegetables before, but I don’t think I’ve ever roasted sweet potatoes with Brussels sprouts. I’m not sure why I never thought of doing it?!?! 🤷🏼‍♀️

I peeled a sweet potato and cut it into bite size chunks. I trimmed off the ends of the Brussels sprouts and cut them into halves or quarters depending on the size. I tossed the veggies in olive oil and Everything But the Bagel seasoning. I spread them on a baking sheet covered with foil that I sprayed with olive oil spray. Here’s the before picture…

I roasted the veggies at 400 degrees for about 30 minutes, stirring halfway through. I like my Brussels sprouts to be a little crispy and charred. If you don’t want them quite as crispy, just cut the time by about 5 minutes. You’ll want to make sure that your sweet potatoes are fork tender. Here’s the after picture…
