Basil Pesto Pasta Salad

Pasta Salad…it’s a great side dish for Summer picnics, pool parties, or weekday burgers on the grill. This Basil Pesto Pasta Salad is super simple to throw together and you can make it ahead of time so it will be ready when you are.

IMG_8739

All you need to make this yummy side dish is pasta, basil pesto, some mozzarella cheese, and your choice of fresh veggies. You can use either store bought or fresh homemade basil pesto in your pasta salad. If you want to make your own, there are all kinds of recipes on Pinterest like this one. I used Classico Traditional Basil Pesto in my salad this time.

I used tricolored rotini pasta to add a little more color to the finished dish. Cook the pasta according to package directions – making sure to not overcook it. Drain and rinse the pasta with cool water and add to a bowl. Cut the mozzarella cheese into small cubes and add to the pasta. Then add whatever veggies you have on hand. I added broccoli florets and grape tomatoes cut in half. Gently toss the salad with desired amount of pesto – I used about 1/2 cup. Then put it in the fridge to chill. You can make this several hours ahead, or even the day before you are ready to serve it.

Your family doesn’t like broccoli? Use your favorite veggies – cauliflower, zucchini, yellow squash, sweet peas – whatever you’d like. You can also add some cooked chicken or turkey (a rotisserie chicken from the deli would work great!) to turn this into a main dish on a hot Summer evening. Add some bread and fruit for a light dinner that won’t heat up your kitchen!

Summer Sunset – Michigan City, IN

Michigan City, IN…It’s where I grew up. Located on the southern tip of Lake Michigan, it has one of the best beaches for just hanging out or for watching some of the most beautiful sunsets. I have to admit that now that I live in another state, I miss those Summer sunsets more than I thought I would. (Although I don’t miss the Winter cold and snow! 😉 ) So when I get the chance to enjoy a warm Summer evening at the beach, it’s a special treat!

A few weeks ago, we found ourselves in Indiana and of course made a trip to the beach for a walk on the pier as the sun was beginning to set. Here are just a few pictures I snapped of the beach and the sunset.

If you ever find yourself near my little hometown of Michigan City, IN, I hope you’ll have a chance to take in one of our beautiful sunsets! 🌅

Just Because Card

Sometimes a card I create just makes me happy. This is one of those cards. 🙂 I love the color combo, the texture – it just makes me smile!

The flower stamp is Feel the Joy from Unity Stamp Company. The sentiment is also from Unity Stamp Company, but I’m not sure which set. It was a free stamp they sent me with one of my orders – I just love that company!! The embossing folder is Swiss Dots from Cuttlebug.

To make the card, stamp the flowers with coral ink on white card stock, trim, and round the corners. Stamp the sentiment with coral ink on white card stock, punch with a scalloped oval punch, and ink the edges with coral ink. Emboss a panel of kraft card stock using the Swiss Dots embossing folder and attach to a white card. Attach a rectangular piece of coral patterned paper and a square of turquoise paper to the card. Attach the stamped flowers and then attach the sentiment with foam tape.

This is the 3rd of 3 cards that I am excited to have published in the Summer 2017 issue of Take Ten Magazine. You can find my posts on the other 2 here and here🙂

This is a great layout to use for any occasion – change the flower stamp and sentiment or the colors and you can use it for anything!

Crocheted White Cotton Dishcloths

Some of my favorite things to crochet are cotton dishcloths. They work up really quickly, are so useful, and there are tons of great free patterns out there! Search on Pinterest or Ravelry and you are sure to find something that you will love!

I found some great textured patterns on Pinterest and made some dishcloths in white with I Love This Cotton yarn from Hobby Lobby. I really do love this yarn! 🙂 It is softer than other cotton yarns I’ve tried and so easy to work with – try it for your next cotton project, I don’t think you’ll be disappointed! Oh, and there are lots of colors to choose from!!

I used the pattern found here for this one…

The pattern for this one is here

And the last pattern is here

This set of dishcloths was a birthday gift for my sister-in-law. I packaged them up in a little berry basket, put the basket in a cellophane bag, and tied it with twine.

These don’t have to be used just for dishes! Because they are made from cotton they also make great spa cloths for the bath. Make them in your favorite colors, add some pretty soaps or bath gel, and you have another great gift!

I have a couple of older posts with links to other dishcloth patterns that I love. You can find them here and here.

I hope you are inspired to get your hook moving and whip up a few of these fun dishcloths!

Summer Dipped Oreos

Do you need a fun dessert to take to your Summer BBQ, family reunion, or picnic? These easy to make Summer Dipped Oreos may be just the thing!

All you need are vanilla candy melts in red, white, and blue, some sprinkles, and, of course, Oreos. 🙂 I got my candy melts at Hobby Lobby in the cake/candy decorating section and the sprinkles were in the 4th of July section. Most craft or cake decorating stores will carry the supplies you’ll need – except the Oreos…you’ll have to go to the grocery store for those. 😉

Line a rimmed baking sheet or two with wax paper – this will make cleanup easier especially if you use the sprinkles. Melt the candy melts in the microwave according to the package directions. Dip the Oreos one at a time into the melted candy. Remove with a fork and place directly onto the wax paper. Drizzle a different color of candy over the cookies and add the sprinkles. Be sure to do this before the candy has cooled or the sprinkles won’t stick! Let sit for a while until the candy has cooled and set.

And here they are!! A fun addition to any Summer gathering…

This would be great to do with the kids! I’m sure they would enjoy decorating their own cookies!! 🙂

Happy Day Card

Do you need a quick birthday card? This one stamps up in just minutes!

The stamps I used are from the Your Presents set and Perfect Pairings set by Stampin’ Up. They are older stamp sets that are discontinued, but I hope you will use this card as inspiration to create your own using the stamps you already have!

I stamped the gifts and bows with orange and turquoise ink directly onto a white card. I stamped the sentiment with orange ink on white card stock, punched it with a scalloped oval punch, and inked the edges with turquoise ink. It’s attached to the card with foam tape.

And that’s it! So quick. So easy. Just a few minutes and you have a cute card ready to put in the mail!!  Change the colors or the sentiment to personalize your card. And, again, use the stamps you already have to make a similar card!

This is the 2nd card of 3 that I’m excited to have published in the Summer 2017 issue of Take Ten magazine. 🙂 You can find the 1st one here. I’ll share the 3rd one soon!

Patriotic Garland

Here’s a fun Patriotic Garland to make for your mantel or window or anywhere else you might like to hang it!

I found these red, white, and blue twig stars at Hobby Lobby in the 4th of July section. The tag marked them as scatters and fillers, but I thought they would look so cute strung on some twine. The package included 2 sizes of stars with 2 of each color for a total of 12.

I used some off white twine to string the stars, tying a simple knot at the top of each star. And that’s it! Just hang it in your favorite spot. 🙂

A cute little accent to celebrate Independence Day and all Summer long!

Chocolate Cupcakes with Vanilla Buttercream Frosting

Homemade Chocolate Cupcakes with Vanilla Buttercream Frosting!! What could be better?!?!? Maybe a few sprinkles on top. 😉

I love cupcakes and this recipe for Chocolate Cupcakes from Scratch by Tastes of Lizzy T is just so yummy! She adds coffee to the batter! Don’t worry if you’re not a coffee drinker – they don’t taste like coffee…it just enhances the flavor of the chocolate. There is a recipe included for Chocolate Sour Cream Frosting with the cupcake recipe which I haven’t tried – but I’m sure it is so very good! Next time… 🙂

This time I chose to use the recipe for Vanilla Buttercream Frosting from Magnolia Bakery. You can find a link to the recipe in my post for Magnolia Bakery’s Vanilla Birthday Cake Cupcakes here – and you will want to try these cupcakes, too – so good!!!

Anyway…back to the chocolate cupcakes…

Here they are ready to pop in the oven. If you don’t have one of these 24-cup cupcake pans, you need to get one! They make baking so much faster and easier. (I got mine at Hobby Lobby with a 40% off coupon making it a great deal.)

Fresh-baked, hot, and my kitchen smells so good…

IMG_8458

Here they are with the amazing Vanilla Buttercream Frosting and a few sprinkles…

IMG_8459

And a close up…so moist, so chocolatey, so yummy! It was hard to put it down long enough to snap a picture!

These cupcakes are so tasty. My husband said they just might be the best cupcakes he’s ever had…I know your family would enjoy them as a special treat. 🙂

Just for You Card

Today I want to share another quick and easy card that comes together in just minutes. This color scheme is great for a masculine card – which can sometimes be the one of the hardest to make!

The stamps are all from Stampin’ Up – 3 different sets called Work of Art, Gorgeous Grunge, and Summer Silhouettes (for the lattice background – this set is discontinued 😦 ). I stamped the 3 background stamps with brown ink on a tan card. The order you stamp them in really doesn’t matter. Just overlap them a little when you stamp them. I stamped the sentiment with brown ink on tan card stock, punched it with a circle punch, and lightly inked the edges with brown ink. The circle is attached to the card with foam tape. Then I added 2 clear turquoise gems to the card for a little something extra. 🙂

If you don’t have these particular stamp sets, look at what you do have. You might be surprised at the images you can put together to make a similar card.

Super easy to make! Change up the colors or use sequins or flowers instead of gems. Change the sentiment. This layout can be used for just about any occasion!

And just as a side note… I’m so excited to say that this card is published in the Summer 2017 issue of Take Ten magazine along with 2 others that I’ll share with you soon! 🙂

Crochet Simple Striped Dishcloths

While perusing Pinterest, I found these fun Simple Striped Dishcloths. They are so cute with the little pop of color, quick to stitch up, and are a great way to use up left over cotton yarn from other projects. You can download the free pattern from Whiskers & Wool here.

I used I Love This Cotton yarn from Hobby Lobby. So far, this is my favorite cotton yarn to work with. It is so soft and comes in tons of colors! I used white for the main color and turquoise, red, and bright green for the stripes.

IMG_8455

Crocheted dishcloths make great little gifts. Package them up in a cute basket or tie them with a pretty ribbon. I found this white metal basket at Hobby Lobby and tied it with a striped ribbon…

IMG_8452

I love the texture of these dishcloths – they are so pretty! And who doesn’t need a little extra cuteness while washing dishes!!
